The food and so much more. Each recipe starts out with an explanation of what the dish is, list of ingredients and you should be able to substitute for your healthier dietary needs: low sodium, low sugar, low fat products.
There are a LOT of ingredients in the recipes. Directions are given in how to make them and Servings is listed. There is no time listed but it would appear to take quite some time to make.
There are NO pictures. There is NO nutritional information.

Forget the recipes -- either he leaves out steps and ingredients, or the products are unattainable locally -- but he has a wonderful writing style. I loved finding out about calypso, steelpan, fetes, lime & wine ... hope he writes a travelogue about or a novel set in Trinidad & Tobago someday. ( )
