Freeman, an accomplished photojournalist from England, mines his accumulated experiences from numerous trips to Southeast Asia in this examination of food traditions, preparation and cooking techniques, social history, and agricultural economics of the region. Freeman's experiences in Burma, Cambodia, Indonesia, Laos, Malaysia, the Philippines, Thailand, Singapore and Vietnam contribute to his romantic yet admittedly oversimplified conclusion that rural Southeast Asia is the "real" Southeast Asia (p. 10) and that, either as reason or result, the cooking of Southeast Asia "is essentially vernacular" (p. 240). . . .
