I picked this up at a second-hand stall, never having heard of the author (a fashionable blogger and video-poster, I gather) but having noticed a recipe for a family favourite, millionaire's shortbread. The recipe that I actually tried is called "Oat & cinnamon healthy cookies". They are healthy in that they contain lots of oats, not much butter, and honey instead of sugar. As a result, they formed a stiff mixture, not really spreading at all during cooking (I had to flatten them with a wooden spoon), and the resulting brown blobs were quite unpleasantly dry and under-sweetened. Made as a traybake and cut into rectangles, it might have provided a supply of distinctly spartan breakfast bars. I may have to dip them in melted butter and honey to make them marginally edible. [ETA: Fortunately, the kids are prepared to eat them.] Checking other recipes online for oatmeal cookies, I find the ingredients here to be very oddly proportioned. After this experience, I am reluctant to spend money on ingredients for the shortbread in case it is similarly underwhelming. MB 23-ii-2023… (meer)
