Vampire short story collection

I've been searching for this book a few years now, because I have friends that I know would like it and want to recommend it, but can't remember the title. The cover was very red, and was the most striking thing about it. I can only remember a couple of the stories well enough to describe, but one that really stood out was a man discovering the still "living" body of a vampire following a volcanic eruption. Because it seems to be healing itself, he feeds some of its flesh to his very sick son, which has all the awful consequences you would think. I remember the stories being by many and varied authors.
