This is a collection of recipes from a retired New Orleans Firefighter cook. They are spicy and fresh. Medina has a chatty way of presenting them which feels as if you are cooking with him in the kitchen. An enjoyable read, as well as inspiring one to experiment. His recipes are practical (more so if you live near the ocean and a supply of fresh seafood) and he breaks down the steps so they are not too complicated.
