Taste as Experience by Nicola Perullo approaches taste as human experience from three different directions: pleasure, knowledge, and indifference. The main idea is easy to understand. Taste is not just about the food; it is about the interaction of the food with an individual at a particular time in a particular situation. The book itself though is hard to follow at times and seems geared towards a much more academic audience.
