In the late 80's/early 90's, my dad brought home a Big Blue book full of bedtime stories from a layover in England.
It had many illustrated classics, like the Princess and the Pea with a wonderful painting of a princess laying on so many mattresses that she had to use a ladder to get into bed.
The most memorable story for me, involved a little girl riding a giant St Bernard like a horse as he saved her from something, maybe the fire of London.
It was a larger than normal book, blue, with various illustrations from the stories on the cover.
This is all I remember.

Maybe The Blue Fairy Book by Andrew Lang

It could be a collection of Hans Christian Anderson stories. There's a dog in one story called The Tinderbox

There's a nice illustration on the wikipedia page:

Maybe if you recognize the illustration (this one or one of the many that a google search will find) you can use isfdb.org to find the book.

Maybe The Lion Storyteller Bedtime Book by Bob Hartman. I don't know if it is oversized, but I remember it as a large book
