Master Ruperto de Nola was an Italian cook that moved to Spain. He is cited as a source for Spanish recipes; however, his recipes strongly resemble Martino de Cuomo's Italian recipes from 1390. It could be studied in comparison to the Epulario to determine if there is any evidence of Spanish influence verses the passage of time.

Vincent F. Cuenca, transl. & commentary. Ruperto de Nola was the cook of King Fernando of Naples. At his king’s command, he produced this treatise on cookery. The recipes represent a Spanish culinary tradition. His book also discusses the service, servants, and officials of the houses of kings and great lords, as well as how people of lesser estate should conduct their households.
