Cheryl Mussatto, author of "The Prediabetes Action Plan and Cookbook: A Simple Guide to Getting Healthy and Reversing Prediabetes", is a registered dietician, teacher, and blogger (Eat Well to Be Well). She states that her more than thirty years experience as a health care professional, especially her time as a clinical dietician in an endocrinology clinic, have given her the insight and inspiration to help those with prediabetes achieve a manageable healthy lifestyle. Included in the book is an explanation of what "prediabetes" means--plus foods to avoid and foods to include, how to read a nutrition label, healthy meal plans and activity suggestions, and much more. The 75 recipes cover breakfast through dessert, and there's something there to please everyone. Here's a sampler of the many delicious dishes you will find: "Whole-Grain Breakfast Cookies"; "Mushroom, Zucchini, and Onion Frittata"; "Lentil and Vegetable Soup"; "Herb-Roasted Chicken Breast"; "Vegetable Rolls with Dipping Sauce"; "Sauteed Greens"; "Black Bean and Corn Salad"; "Sweet Potato Fries"; "Creamy French Dressing"; "Mushroom Gravy"; "Dark Chocolate Drops"; "Carrot Cake"; and "Chocolate-Zucchini Cupcakes". A nutritional breakdown is provided for each recipe. I couldn't resist making the "Dark Chocolate Drops". Very simple--melted dark chocolate is combined with chopped dried fruit, nuts, and seeds. The hard part was waiting for them to set until they were firm enough to eat. They were so good, and they would make a sweet-treat of a gift packed in a pretty tin and given to someone special.
