mochi cookbook - very nice selection of recipes including the modern timesaver microwave daifuku recipes (w/assorted fillings), traditional pounded mochi (can be filled or cooked up as a savory dish), odango (boiled bites on skewers), baked goods recipes (kuri manju buns w/fillings, cupcakes, pancakes, baked donuts with glazes, chi chi dango, waffles, brownies).

1/4/2023: Success! I tried the microwave method explained in the book and made some very tasty (and fairly quick/easy) peanut-butter mochi filled with banana chunks (with a smear of PB) in my own adaptation of the suggested flavor combos. I burned my fingers a little handling the still-cooling mochi dough (be forewarned it will be hort!) and cleaning up the bowl afterwards wasn't easy, but I didn't mind trying to lick the bowl. Would make again, pending a restock of my cupboards.

12/15/2022: I tried the coconut chi chi dango recipe first since it did not require the extra steps of prepping a filling, but I used maybe 2 or 3 too many substitutions and ended up with a tasty but strange half-pudding, half-mochi brownie. Will have to go get the right ingredients and try again..

A visually stunning cookbook showcasing a number of different recipes to make the Japanese treat mochi.

The book begins with a bit of insight as to how the book came into being and an introduction to the different types of mochi.

The recipes are written concisely in plain English and are accompanied with step by step photographs of the method. This allows even a novice the confidence to have a go making these delicious treats.

I also like how complimentary recipes, for example filling suggestions, are noted and a page number given.

There are many photographs throughout the book to inspire your creativity and the author encourages you to experiment and try new flavour combinations.

Overall, a beautiful cookbook that includes the history of the treat as well as numerous recipes to try.
