I am interested in learning more about the history of "traditional" American baking (cakes, pies, cookies, etc.), particularly the roots in international cultures. I haven't seen many books about this topic (baking specifically). If you have come across a helpful resource, please share! I will do the same as my collection continues to grow.

What an interesting query! I would suspect that many early American baking recipes were probably brought over from England, the Netherlands, and France (depending on the area and the settlers involved) but I don't know of any book addressing this heritage explicitly. I hope someone chimes in here with more information.

In The Frugal Gourmet on Our Immigrant Ancestors Jeff Smith specifically focuses on the food we American brought with us. I don't have it handy or I would look to see how much he discusses baking.
